This limited natural process comes from the Yaye washing station in the Sidama region of Ethiopia. Producers follow a precise regimen to harvest, sort, and wash the coffee cherries before they are dried and milled. The resulting cup features notes of stewed berries, peaches and nectarine with a hint of grapefruit.
